What are good Node.js projects to put into my portfolio as a mid-level developer?

I am a (mostly) frontend developer mainly in React.js. I have been working for 5 years now and I'm currently looking for a new job. I want to move to a full-stack position but since I don't really have any professional experience with backend development, I scared it will be harder for future employers to accept me as a full-stack developer position (especially if I'm aiming for jobs with a higher salary). Now, I'm very experienced with Python and JS so I will not have any problem to code the backend service. My problem might be when it comes to architecture and system design. So, if I were to create a project for my portfolio, what would be a good project to showcase my capability? Also, what are the must have tech to include into the project? Redis? Docker? Graphql?
